Fortunately, there are several local ingredients widely available that aid in this endeavour and can be added to create summer-friendly dishes and beverages.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-93324\" src=\"https:\/\/goakhabar-com.preview.jikut.com\/wp-content\/uploads\/2024\/04\/20.04.jpg\" alt=\"\" width=\"300\" height=\"293\" \/><\/p>\n<p dir=\"ltr\">\u201cIt is of paramount importance that one should regulate their body temperature through dietary alterations during the summer months in Goa. Recommended coolers to keep oneself hydrated are coconut water, fresh fruits like watermelon and pineapple, kokum juice and\u00a0sol kadi\u00a0(kokum curry) to improve gut health and replenish electrolytes, antioxidants, minerals and vitamins lost to sweat and temperature regulation,\u201d stated Varsha Bhide, consultant nutritionist and dietician, Healthway Hospitals, Old Goa.<\/p>\n<p>&nbsp;<\/p>\n<p dir=\"ltr\">\u201cKokum is a readily available, beloved ingredient in Goa. Syrup extracted from the fruit of the kokum tree, renowned for its cooling properties, makes for the perfect summer drink. I also enjoy experimenting with kokum, incorporating it into various recipes,\u201d said Chef Alison Melroy Fernandes, faculty chef at the Verna-based Kamaxi College of Culinary Arts (KCCA).<\/p>\n<p>&nbsp;<\/p>\n<p dir=\"ltr\">Chef Fernandes also lists cashew\u00a0neero, the sweet, unfermented juice of the cashew apple, as a preferred summer beverage and\u00a0ambade sasav\u00a0or Goan hog plum curry\u00a0as a dish that is compatible with the summer heat.<\/p>\n<p>&nbsp;<\/p>\n<p dir=\"ltr\">According to Pranav Dhuri, co-owner of Petisco Goa, the summer-favourite fruit, mango, which can be \u2018heaty\u2019 if eaten in large quantities, has been adapted into a cooling avatar in Petisco Goa\u2019s summer menu.<\/p>\n<p>&nbsp;<\/p>\n<p dir=\"ltr\">\u201cThe \u2018Coco Ambo\u2019 gin-based cocktail utilises Mankurad mangoes and coconut milk for a refreshing drink. Our cocktails made with\u00a0urrak, the traditional Goan spirit from the juice of fermented cashew apples, are also effective coolers. We also utilise cooling ingredients like cashew apple, tender coconut flesh, jackfruit, breadfruit, raw mangoes, bilimbis (bimbli) and kokum in our menu offerings,\u201d said Dhuri, who is also secretary of the National Restaurant Association of India &#8211; Goa Chapter.<\/p>\n<p>&nbsp;<\/p>\n<p dir=\"ltr\">Former Goa Agricultural Officer and executive committee member of the Botanical Society of Goa, Miguel Braganza, fondly known as the \u2018Plant Man\u2019 of Goa, highlights the importance of wood apple or bel fruit, known as\u00a0belfoll\u00a0in Konkani, in overcoming heat exhaustion.<\/p>\n<p>&nbsp;<\/p>\n<p dir=\"ltr\">\u201cSyrups made from\u00a0belfoll\u00a0are available in stores in Margao and efficiently combat the heat.
